Cheddar Dill Macaroni Salad Recipe!

Good Morning!

Today I'm sharing a yummy, delicious Macaroni Salad recipe.  I first had this at my friend, Margarita's, family party.  They sure do know good food!  It's an awesome combination of ingredients that you would never thing should go together, but they do!


Okay, so here's what you need...

1 1/2 Chopped Olives
2 C Dill Pickles - Diced
3 C Mild or Medium Cheddar Cheese - small cubes
1 Lg. Bag Small Macaroni Elbow Pasta or Salad Macaroni
2 C Mayo
2 Tbsp Fresh Dill
2 Tbsp Garlic Salt
1 Tbsp Salt
2 Tsp Hot Sauce
2 Tsp Pepper


Boil your Macaroni per directions.

While boiling your macaroni, start combining your ingredients in a separate bowl.

Dice your pickles and put in bowl (I blot mine on a paper towel for a little while to get the excess pickle juice off).


Cut and small cube your cheddar cheese.  Add to bowl.


Add your chopped olives (or dice them if you only have whole olives) and add to the bowl.  Mix the cheese, olives and pickles in the bowl.


Add your mayo now.



Add all of your seasoning and mix well.  You want everything to be nicely covered in the mayo and spices mixture.

When your macaroni is done, drain.  Rinse the pasta in cold water and let it drain again.  Once your macaroni is all drained, add to the bowl with the rest of the ingredients.  Put in fridge until your ready to eat.


Yum!  This is perfect for any summer cookout, BBQ, party - whatever!  It makes a ton, but if your husbands like mine, it'll turn into a midnight snack and you won't have leftovers for long!
